Torchio di Genestredo

È una stradina privata quella che, dal centro della frazione di Genestredo, porta all’antico Torchio, recentemente riordinato e ristrutturato. Quest’ultimo è collocato all’interno di un casolare in pietra con un unico accesso laterale di una porta in legno. Appena la si scosta si rimane affascinati dalle dimensioni dell’intera struttura, che riempie perfettamente l’intero locale, scoprendo così un raro esempio di ingegneria locale spontanea, probabilmente risalente alla fine del XVII secolo.

Il torchio è composto dall’assemblamenti di più travi di pressione lunghe circa 7 metri, squadrate ai lati, che sovrastano la grande vasca quadrata, anch’essa in legno, la quale, grazie al sistema di leva e pressione accoglieva le vinacce e i gherigli di noce precedentemente macinati. La grande trave vite rotante presenta sulla parte iniziale una lavorazione esagonale, di pura decorazione, che ci fa presupporre una datazione sicuramente posteriore al 1650.

Al lato del torchio è ben visibile un grosso frantoio, composto da una macina verticale in pietra dello spessore di 30 cm circa e del diametro di un metro che gira nella gola del monolito di base, attorno al suo perno in legno. Qui si macinavano i gherigli che, avvolti in robuste tele di canapa, venivano messi sotto il pressoio per dare il primo olio di noce crudo e dopo la ricottura nella seconda pressione, davano il secondo olio cotto che serviva per l’illuminazione. Sempre qui, probabilmente si pressavano le castagne per ricavarne la farina ma anche la canapa per prepararla alla filatura. Non di meno, sempre in questo locale venivano portate da tutto il paese le vinacce per ricavare il vino.

Ciò che accadeva in questo luogo in passato, generazione dopo generazione, era la storia quotidiana degli uomini, delle tradizioni e del diverso modo di vivere rispetto i giorni nostri. La condivisione del torchio, permetteva, a turno, a tutti gli abitanti della frazione di Genestredo, di produrre e lavorare per il fabbisogno dell’intera comunità.
A private road leads from the centre of Genestredo to the old Press, which was recently restructured. The press is located inside a stone cottage with a wooden door as a single side access. As soon as you leave it, you will be fascinated by the size of the whole structure, which perfectly fills the entire room, thus discovering a rare example of spontaneous local engineering, which probably dates back to the end of the 17th century.

The press consists of an assembly of several pressure beams about 7 metres long, with squared sides, which overlook the large square wooden tank, which, thanks to the lever and pressure system, received the previously ground marc and walnut kernels. The large rotary screw beam presents a hexagonal decoration, which makes us assume that it certainly dates back to later than 1650.

On the side of the press there is a big oil mill, composed of a vertical stone grinder with a thickness of about 30 cm and a diameter of one meter that turns in the throat of the base monolith, around its wooden pin. The kernels were ground here: they were wrapped in sturdy hemp clothes, then they were placed under the press to obtain the first raw walnut oil and after the recooking in the second pressing procedure it was possible to obtain the second cooked oil that was used for lighting. Always here, chestnuts were  probably pressed to make the flour, but also the hemp was processed to prepare it for spinning. The marc was brought to this place from all over the village to obtain the wine.

What happened in this place in the past, generation after generation, was the daily history of men, of traditions and of the different way of living with respect to the present day. The sharing of the press allowed, in turn, all the inhabitants of the hamlet of Genestredo to produce and work for the needs of the whole community.
