Ex latteria - Museo dei latticini


La Latteria Sociale di Beura nacque nel 1926 con lo scopo di offrire alle famiglie del luogo un locale dove produrre il formaggio: venne costruita nei pressi del torrente Ogliana per favorire l’entrata di acqua utile al raffredda­mento del latte, del burro e dei formaggi a pasta molle. Il latte appena munto veniva depositato, misurato e registrato, e in base alla quantità di latte il contadino aveva la possibilità di portare a casa un quantitativo proporzionale di formaggio. La cuagià, o cagliatu­ra, era giornaliera e spettava ogni volta a un diverso socio. Oggi l’antica Latteria è un museo che, nelle tre sale espositive, ripercorre tutti i processi di quell'antica attività, dalla lavorazione del latte alla stagionatura sino alla vendita e conservazione.
The Dairy Cooperative of Beura was established in 1926 with the aim of offering the local families an ideal place to produce their cheese: it was built near the stream Ogliana to favour the entrance of water useful for the cooling of milk, butter and soft cheese. The fresh milk was measured and recorded, and according to the amount of milk the farmer had the opportunity to bring home a proportional quantity of cheese. The cuagià, or curd, was daily and it was up to a different partner each time. Today the old Dairy is a museum that, in the three exhibition rooms, covers all the procedures of this ancient activity, from the processing of milk to the aging up to the sale and preservation.
